Blueberry Pancakes

Serves: 2

Ingredients

1 cup flour

1 ½ tbsp baking powder

¼ tsp salt

1tbsp maple syrup

1 cup Oat Milk (or other plant based milk of choice)

1 tbsp coconut oil, melted

1 cup blueberries

1 flax egg (1 tbsp ground flax seeds mixed with 3 tbsp of water)

Extra coconut oil for cooking

Maple Syrup

Blueberries


Instructions


Mix

Mix the flour, baking powder, and salt together in a bowl. In a separate bowl, whisk the milk, coconut oil, flax egg, and maple syrup together. Pour the wet ingredients into the dry and gently mix until combined. Be careful not to overmix! Next, gently stir in the blueberries. Let the batter rest for five minutes.


Cook

Heat some coconut oil in a large pan on medium heat. Pour a scoop of the butter into the pan and let it cook for 2 to 3 minutes or until little bubbles start to form. Flip and cook for one minute on the other side. Repeat until all the pancakes are made. Serve with extra blueberries and maple syrup, enjoy!
