Tofu Teriyaki Bowl

This is the perfect meal for when you have a lot of leftovers in your fridge and want to make a quick, easy meal that will keep you full and satisfied. It’s also great the next day to bring to work or school.

Serves: 4

Prep Time: 15 min

Cook Time: 30 min


Ingredients


For the teriyaki tofu

1 x 400g pack of super firm tofu

2 tbsp of teriyaki sauce

1 tbsp of soy sauce

½ tbsp sesame oil

1 tbsp of toasted sesame seeds


Vegetable

2 cloves of garlic

A pinch of salt

½ tbsp of avocado oil (or your preferred oil with a high smoke point)

300g of green beans (or any vegetable you have lying around)


To serve

1 cup of cooked japanese sushi rice

1 thinly sliced green onion


Instructions


Tofu

Preheat the oven to 200°c. Press tofu on a paper towel between two plates with a heavy item on top, like a book. Leave for approximately 10 minutes. Then, slice tofu into slabs about 1cm thick and place onto a lined baking sheet. Combine the teriyaki sauce, soy sauce, and sesame oil and ladle it over the tofu pieces, flipping them in order to cover both sides. Bake in the oven for 30 minutes, flipping them halfway. Let cool for 2 minutes and sprinkle with sesame seeds.


Vegetable

Wash and trim the green beans off any stems. Peel and mince the garlic cloves. Heat the oil for approximately 45 seconds or until hot on a medium-high heat. Saute the garlic until fragrant and just starting to brown. Add in green beans and salt and continue to saute for a further 4 minutes or until cooked to your desired texture.


Serve

Divide the rice between 4 bowls, top with tofu, vegetables, and spring onions. Enjoy!
