Tofu Dumplings with a Spicy Dipping Sauce

These dumplings are a little flavour bomb. They are super fun to make and they freeze super well so you can save them for the next time you need a dumpling fix.

Serves: 4

Prep Time: 45 minutes

Cook Time: 10 minutes


Ingredients

Avocado oil (or other neutral oil with a high smoke point)

4 garlic cloves

1 inch piece of ginger

4 small bok choys

⅓ of a purple cabbage

1 carrot

100g mushrooms (preferably white beech mushroom)

1 pack firm tofu

3 tbsp Soy sauce

2 tbsp Sesame oil

1 tsp salt

1 pack Dumpling wrappers


Dipping Sauce

2 tbsp soy sauce

1 tbsp sesame oil

1 ½ tbsp chilli crisp or other chilli oil

½ tbsp black vinegar

2 tsp sesame seeds

1 tbsp spring onion


Instructions


Preparing the filling

Press tofu on a paper towel between two plates with a heavy item on top, like a book. Leave for approximately 10 minutes. Alternatively use a tofu press. While tofu is being pressed, wash and peel the carrot and cut into quarters. Then, wash and cut the purple cabbage and bok choy into one inch chunks. Place the garlic, ginger, carrot, cabbage, bok choy, and mushrooms in a food processor and blend until diced. Place into a large bowl. Crumble the tofu into small pieces with your hands. Add in the soy sauce, sesame oil, and salt. Mix and set aside.


Wrapping the dumplings

Place the wrapper on a cutting board and scoop about a tablespoon of the mixture into the middle of the wrapper. Dip your finger in water and run it along the edge of the wrapper. Fold in half, pleating as you squeeze the two sides together. Repeat until you have run out of filling.


Cooking the dumplings

In batches, heat 1 tablespoon (should coat the pan) of oil over medium-high heat. Add the dumplings and cook for about 2 minutes or until golden brown. Pour 2 tablespoons of water into the pan and cover to steam. Repeat.


Preparing the dipping sauce

Thinly slice the green part of the spring onion. Mix the soy sauce, sesame oil, chilli crisp, black vinegar, sesame seeds, and spring onion until combined. Enjoy!
